On Monday, 20 October 2025, one of Mexico City’s most inventive bar voices crosses the Pacific — blending engineering precision, mathematical creativity, and Latin soul behind the stick. Daniel Ortega (Bijou Drinkery Room, Mexico City)
Born in Havana, Cuba, Daniel trained as a Telecommunications and Electronics Engineer before discovering that his true medium wasn’t circuits — it was cocktails. Since moving to Mexico City in 2019, he’s shaped the programs of Handshake and Fifty Mils, before launching his own project: Bijou Drinkery Room, now ranked #34 on North America’s 50 Best Bars 2025. Like any engineer, Daniel finds beauty in structure.
His menus turn mathematics into art — from Bijou’s Rubik’s Cube Menu with over 80,000 possible combinations, to Less is More, where formulas meet flavour. Today, as Bar Manager and Beverage Director of Bijou, Rubí Bar, and Less is More, he continues to redefine what it means to build with balance.
